Marine Hotel - Easter Sunday Menu

The Marine Hotel is delighted to launch it's Easter Sunday 2012 Menu:

To Begin…


French Brie wrapped in Crisp Rice Paper
Light Berry compote

Smoked Salmon and Trout Tian
Salsa of Diced Beetroot, Red Onion and Dill

Classical Chicken Caesar
Strips of Fillet Chicken, Pancetta Pieces, Herb Croutons and Dressed Leaves, Parmesan Flakes and finished with a soft Poached Egg

Trilogy of Melons
Watermelon, Canteloupe and Ogen
Shredded Mint, Citrus Ice and Raspberries

Roast Red Pepper and Tomato Soup, Balsamic Oil

Sauté Forrest Mushrooms
Served on Rustic Loaf, Cream and Herb Sauce, Truffle oil drizzle



The Main Event…

Roast Irish Beef Prime Rib
With a Red Onion and Herb stuffed Yorkshire pudding,
Red wine and Tarragon Roasting Gravy

Braised Lamb Shank, Scallion Mash, Parsnip Crisps, Rosemary & Redcurrant Jus

Slow roasted Pork
Wrapped in Smoked Bacon, Spiced Apple and Peach Chutney finished with
Shallot and Sage Cream

Baked Vegetable stack
Aubergines, Courgettes and flat cap Mushrooms with Roast Peppers & Pesto duo

Supreme of Pan Fried Chicken
Stuffed with sundried Tomato Mousse, thyme infused Red Wine Jus

Seared Beshoffs Cod Fillet
With Spinach Mash and Asparagus spears, Lemon and Basil Hollandaise Sauce
